Oliver’s New Year Trifle
Oliver has been getting inspired with this outrageous Knickerbocker-glory style trifle. He has made a video, which will go out on social media over the holidays. Please forgive the slightly vague recipe, the point is you can do what you like and improvise according to the ingredients you have to hand. Oliver wanted to combine as many indulgent ingredients as possible and make something truly celebratory!
Ingredients For 6-8 guests
230g jar of Berry or Black Cherry Jam
150ml Nutbourne Forager Dessert wine (or other sweet wine)
200ml Rich egg custard (we will forgive you if you just buy a carton)
300g left over Stollen or cake
100ml Mascarpone
200ml Double Cream
2 tablespoons Syrup
A generous squirt of “Squirty Cream” (I told you not to take this recipe too seriously)
100ml Mixed Berries, if you have them
100ml Glacé Cherries, Candied Peel and Walnuts
Method
• Begin by having a good swig of the dessert wine (not included in the recipe quantities). This will set you up to be thoroughly inspired to make the trifle.
• Mix the jam with a little of the Forager wine to let it down. Spoon a layer of the mixture in the bottom of a glass serving dish.
• Next add a layer of custard. Crumb the stollen or cake and layer this over the custard. Sprinkle generously with the Forager.
• Put the mascarpone, cream, syrup and remaining wine into a mixing bowl and whisk
together until the mix holds.
• Layer this into the dish.
• Now comes the fun part - top the trifle with a generous tower of squirty cream, then spoon over berries, glace cherries, and candied peel and nuts.
• Dig in with a spoon. Now that’s the way to celebrate New Year.
