Brussel Sprout Salad

This dish has been a favourite in the Gladwin Brothers’ restaurants for many years. It is a delectable simple marriage of wholesome Winter ingredients.

Ingredients For 6 to share

150g Walnuts
1 tablespoon Honey
50ml Rapeseed Oil
Sea Salt and freshly ground Black Pepper
400g Brussels Sprouts 
2 Coxes Apples
150g Grated Mature Cheddar Cheese
Juice of 2 Lemons

Method

• Roll the walnuts in the honey, with half the oil and plenty of seasoning. Put this mixture into an ovenproof dish, bake in an Air-fryer or pre- heated oven at 160°C for 8 minutes.

• Peel the outer leaves off the sprouts, shred them. Core the apples, cut into matchsticks.

• Mix the sprouts, apple and cheese in a bowl, add the lemon juice and remaining oil, toss together.

• Arrange the salad in a serving dish, with the walnuts and honey on top.
