Bramble & Apple Salsa

In September the countryside is overflowing with wild blackberries, apples and wild herbs. This simple salsa recipe is all about cooking and eating outdoors. Serve with barbecued fish, meat or vegetables.

Ingredients Serves 6 people

1 crisp Apple, cored and finely diced
1 Red Onion,
100gm Wild Blackberries, halved
1 handful Yarrow, celery leaf or parsley, chopped
1 tsp Chilli Flakes
3 tbsp Rapeseed Oil
1 tbsp Red Wine Vinegar
2 tbsp Honey
Salt and freshly Ground Black Pepper

Method

- Finely dice the apple and red onion. Halve the Blackberries.

- Prep the herbs and measure out the other ingredients into a mixing bowl.

- Combine everything together and roughly mix together with a wooden spoon.

- Leave to macerate for at least an hour, serve at room temperature alongside grilled meats, fish or vegetables.
