Festive Recipe: Brussel Sprout Salad
Brussels Sprout Salad, with Apple, Mature Cheddar and Candied Walnuts
This dish has been a favourite in the Gladwin Brothers’ restaurants for many years. It is a delectable simple marriage of wholesome winter ingredients and we are delighted to share the recipe.
Ingredients For 6 to share
150g Walnuts
1-Tablespoon Honey
50ml Rapeseed Oil
Sea Salt and Freshly Ground Black Pepper
400g Brussels Sprouts
2 Coxes Apples
150g Grated Mature Cheddar Cheese
Juice of 2 Lemons
Method
Roll the walnuts in the honey, with half the oil and plenty of seasoning. Put this mixture into an ovenproof dish, bake in an air-fryer or pre-heated oven at 160°C for 8 minutes.
Peel the outer leaves off the sprouts, shred them. Core the apples, cut into matchsticks.
Mix the sprouts, apple and cheese in a bowl, add the lemon juice, remaining oil, toss together.
Arrange the salad in a serving dish, with the walnuts and honey on top.
